  对于食品非热加工历史的探究过程同样十分漫长:1997年以前,食品非热加工领域就有科学家涉足;1998年由中国农业大学教授廖小军正式提出;2009年,在北京召开了国际非热食品加工会。会议的召开提升了非热加工的系统性与完整性,使业内人士对非热加工概念的理解变得越来越清晰。2013年,成立了中国食品科学技术学会食品非热加工公会。
 
  超声波在食品辅助提取、改性、杀菌与强化特定反应中的应用

  超声技术是食品物理加工领域备受关注的一项技术,1929年被发现,1962年被应用到超声提取领域。近几年,科学家对于超声领域的研究,一直在不断深入,但是,超声技术的应用实际上一直面临很多瓶颈。此次专题报告的主题主要针对相关团队将超声波应用在食品辅助提取、改性、杀菌与强化特定反应中时寻求的一些关键技术点。
 


  (一)超声波在食品辅助提取中的应用

  (二)超声波应用于改性和降解

  (五)食醋超声波催陈技术研究
  
  镇江香醋是我国传统的调味品。传统的方法采用的是自然陈酿,设备的占用率较多,生产周期较长。一般方法有高压静电、红外线、超声波、微波、加臭氧技术、激光技术、超高压技术。各个方法都有它的局限性和优点。臭氧技术难以控制,红外线灯光寿命短,微波的挥发作用会影响成香物质。比较好的方法包括高压脉冲电场,伽玛射线和超声波。超声波基本上集合了前面几种方法的优点。首先它带有高压。同时,它能形成电场和磁场。

  最后,通过实验与对比发现超声波确实有促进镇江香醋陈酿的效果,进一步的产业化工作还在开展。
 
  采后农产品射频灭菌新技术与高压电场冷杀菌技术
